Best Type of Meat
When it comes to choosing your hamburger meat you want to make sure you have enough fat content for the best tasting hamburgers. Ground chuck is one of the best options, it is normally between 15 and 20 percent fat. This is the perfect fat percentage to keep your burger from drying out while giving you the perfect amount of flavor.
If you’re buying from the grocery store like a lot of us do normally, Try to get freshly ground in store preferably that day. Look for ground beef that is at least 85% meat 15% fat. If you want your burger even juicier, I recommend 80% meat 20% fat.
Proper Internal Temperature
Safe hamburger temp is 160°F. When it comes to store bought ground beef you don’t want to take chances. Bacteria can grow on the surface of steaks, ribs roast, etc. It is normally just cooked off when the meat is cooked. Once the meat is ground through the bacteria is actually mixed into the meat so it needs to be cooked to a higher internal temp to make sure you get it all. Due to this the safe internal temp for hamburgers is 160° F.
How Long Does It take To Smoke Hamburgers
For this recipe, the pellet grill will be cooking at 225°F. At 225° it should take about 60-80 mins. It will depend on the thickness of the hamburgers for the exact time. We will be cooking the hamburgers in two stages. In stage one we will cook at 225° until the hamburgers reach an internal temp of 140°-145° F. Stage two we will turn the pellet grill up to 400°-450° F and open the sear plate. The goal will be to flip after a couple of mins and reach 160°-165° internal temp
